Enamel or Anodized cookware...Which is better?
I'm planning on buying a set of the 10 piece Rachel Ray cookware. I'm debating between the Green Enamel w/non-stick coating or the Anodized. I have enough money for either so I'm more concerned about quality for cooking and durability. I want them to last a long time! Does anyone know which is better in the long run?
Just remember that enamel is prone to thermal shock, since it's essentially a ceramic coating. Either one will do just fine, although they handle a bit differently.
For what it's worth, unless you know for sure that every piece in the set is what you want, you probably shouldn't go with a set unless the cost is irresistible. In particular, I would tend to go with the anodized set except for three items:
-A nonstick frying pan for fish and eggs
-A stainless steel stockpot for pasta and soup. Can actually be pretty cheap, though a heavy bottom helps for heat distribution. Blowing too much money on a stockpot is pointless anyway.
-An enameled or cast iron dutch oven for stews and deep frying.
I used to work for a major housewares chain (it shall remain nameless, though I found the experience loathsome-n-terrible). When customers bought sets of pots and pans, my advice was to make sure you had one nonstick if you were buying a stainless or anodized set, and one stainless or anodized if you were buying nonstick. So that's worth knowing too.
